Ingredients:

• 2 cups cooked rice
• 2 grilled chicken breasts, diced
• 1 cup corn
• ¼ cup basil pesto
• ½ cup mozzarella

Method:

1. Toss chicken in pesto.
2. Assemble the bowl and top with mozzarella.
