Creamy Tomato Basil Soup
Ingredients:
- 1 tbsp butter
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 can (28 oz) crushed tomatoes
- 2 cups vegetable broth
- 1/2 cup heavy cream
- 1 tsp sugar
- Salt & pepper to taste
- 1/4 cup fresh basil (chopped)
Method:
- Melt butter in a pot, sauté onion for 5 minutes. Add garlic and cook for 1 minute.
- Stir in tomatoes and broth, bring to a boil, then simmer for 15 minutes.
- Blend the soup until smooth. Stir in heavy cream and sugar.
- Season with salt and pepper, add basil, and serve warm.
