Creamy Tomato Basil Soup




Ingredients:

  • 1 tbsp butter
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 can (28 oz) crushed tomatoes
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 tsp sugar
  • Salt & pepper to taste
  • 1/4 cup fresh basil (chopped)

Method:

  1. Melt butter in a pot, sauté onion for 5 minutes. Add garlic and cook for 1 minute.
  2. Stir in tomatoes and broth, bring to a boil, then simmer for 15 minutes.
  3. Blend the soup until smooth. Stir in heavy cream and sugar.
  4. Season with salt and pepper, add basil, and serve warm.
