Classic Chicken Noodle Soup


Ingredients:

  • 1 tbsp olive oil
  • 1 onion (chopped)
  • 2 carrots (sliced)
  • 2 celery stalks (sliced)
  • 2 cloves garlic (minced)
  • 6 cups chicken broth
  • 2 cups shredded cooked chicken
  • 2 cups egg noodles
  • 1 tsp dried thyme
  • Salt & pepper to taste
  • Fresh parsley (for garnish)

Method:

  1. Heat olive oil in a pot, sauté onion, carrots, and celery for 5 minutes.
  2. Add garlic and cook for another minute.
  3. Pour in chicken broth, bring to a boil, then reduce heat.
  4. Add shredded chicken, thyme, and egg noodles; cook until noodles are tender.
  5. Season with salt and pepper. Garnish with parsley and serve hot.
