Classic Chicken Noodle Soup
Ingredients:
- 1 tbsp olive oil
- 1 onion (chopped)
- 2 carrots (sliced)
- 2 celery stalks (sliced)
- 2 cloves garlic (minced)
- 6 cups chicken broth
- 2 cups shredded cooked chicken
- 2 cups egg noodles
- 1 tsp dried thyme
- Salt & pepper to taste
- Fresh parsley (for garnish)
Method:
- Heat olive oil in a pot, sauté onion, carrots, and celery for 5 minutes.
- Add garlic and cook for another minute.
- Pour in chicken broth, bring to a boil, then reduce heat.
- Add shredded chicken, thyme, and egg noodles; cook until noodles are tender.
- Season with salt and pepper. Garnish with parsley and serve hot.
