 Mini Meatloaves






Ingredients:

For the Mini Meatloaves:

  • 1 lb ground beef (or ground turkey)
  • ½ cup breadcrumbs (plain or seasoned)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 egg
  • ¼ cup milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp dried oregano
  • ½ tsp garlic powder

For the Glaze:

  • ⅓ cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp Dijon mustard

Instructions:

1. Preheat & Prep:

  • Preheat oven to 375°F (190°C).
  • Line a baking sheet with parchment paper or lightly grease a muffin tin.

2. Mix the Meatloaf Mixture:

  • In a large bowl, combine ground beef, breadcrumbs, onion, garlic, egg, milk, Worcestershire sauce, and seasonings.
  • Mix gently until just combined—don’t overmix!

3. Shape the Mini Meatloaves:

  • Divide the mixture into 4-6 equal portions and shape them into mini loaves.
  • Place on the prepared baking sheet or into a muffin tin for easy portioning.

4. Make the Glaze & Top:

  • In a small bowl, mix ketchup, brown sugar, and Dijon mustard.
  • Brush the glaze generously over each mini meatloaf.

5. Bake & Serve:

  • Bake for 20-25 minutes, or until the internal temperature reaches 160°F (71°C).
  • Let rest for 5 minutes before serving.

  • Classic: Mashed potatoes & green beans
  • Low-Carb: Cauliflower mash & roasted veggies
  • Sandwich: Slice leftovers for a meatloaf sandwich
