Mini Meatloaves
Ingredients:
For the Mini Meatloaves:
- 1 lb ground beef (or ground turkey)
- ½ cup breadcrumbs (plain or seasoned)
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1 egg
- ¼ cup milk
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp dried oregano
- ½ tsp garlic powder
For the Glaze:
- ⅓ cup ketchup
- 1 tbsp brown sugar
- 1 tsp Dijon mustard
Instructions:
1. Preheat & Prep:
- Preheat oven to 375°F (190°C).
- Line a baking sheet with parchment paper or lightly grease a muffin tin.
2. Mix the Meatloaf Mixture:
- In a large bowl, combine ground beef, breadcrumbs, onion, garlic, egg, milk, Worcestershire sauce, and seasonings.
- Mix gently until just combined—don’t overmix!
3. Shape the Mini Meatloaves:
- Divide the mixture into 4-6 equal portions and shape them into mini loaves.
- Place on the prepared baking sheet or into a muffin tin for easy portioning.
4. Make the Glaze & Top:
- In a small bowl, mix ketchup, brown sugar, and Dijon mustard.
- Brush the glaze generously over each mini meatloaf.
5. Bake & Serve:
- Bake for 20-25 minutes, or until the internal temperature reaches 160°F (71°C).
- Let rest for 5 minutes before serving.
