1. High-Protein Chicken and Quinoa Soup





Ingredients:

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 cup quinoa, rinsed
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp thyme
  • 1/2 cup fresh spinach (optional)

Method:

  1. Heat oil in a pot, sauté onion, carrots, and celery for 5 minutes.
  2. Add garlic, cook for 30 seconds, then pour in broth.
  3. Stir in chicken, quinoa, salt, pepper, and thyme. Simmer for 15 minutes.
  4. Stir in spinach and serve warm.
