1. High-Protein Chicken and Quinoa Soup
Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 cups cooked shredded chicken
- 1 cup quinoa, rinsed
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp thyme
- 1/2 cup fresh spinach (optional)
Method:
- Heat oil in a pot, sauté onion, carrots, and celery for 5 minutes.
- Add garlic, cook for 30 seconds, then pour in broth.
- Stir in chicken, quinoa, salt, pepper, and thyme. Simmer for 15 minutes.
- Stir in spinach and serve warm.
