 Chicken Florentine



Ingredients:

  • 2 large boneless, skinless chicken breasts (halved lengthwise)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 cups fresh spinach
  • ½ cup cherry tomatoes (optional, halved)

Instructions:

  1. Prepare Chicken: Season chicken with salt, pepper, and garlic powder.
  2. Cook Chicken: Heat olive oil in a skillet over medium-high heat. Cook chicken for 4-5 minutes per side until golden and cooked through. Remove and set aside.
  3. Make Sauce: In the same pan, melt butter and sauté garlic for 1 minute. Add chicken broth, heavy cream, Parmesan, and Italian seasoning. Simmer for 2-3 minutes.
  4. Add Spinach: Stir in spinach (and tomatoes if using) and cook until wilted.
  5. Combine: Return chicken to the skillet, spoon sauce over the top, and let simmer for 2-3 minutes.
  6. Serve: Enjoy over pasta, rice, or with crusty bread!
