Spicy Chipotle Street Corn Chicken Rice Bowl
Ingredients:
- 2 cups cooked rice
- 2 grilled chicken breasts, diced
- 1 cup corn
- ½ cup cotija cheese
- ¼ cup chopped cilantro
- 2 tbsp chipotle sauce
- ¼ cup sour cream
- 1 tsp cayenne pepper
- Salt & pepper to taste
Method:
- Mix sour cream and chipotle sauce to create a drizzle.
- Char the corn on a pan or grill.
- Assemble the bowl with rice, chicken, and corn.
- Top with chipotle sauce, cheese, and cilantro.
