 The Denver Omelet


Ingredients:

  • 3 large eggs
  • 2 tbsp milk (optional, for fluffier eggs)
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ½ tbsp butter
  • ¼ cup diced ham
  • ¼ cup green bell pepper (diced)
  • ¼ cup red bell pepper (diced)
  • ¼ cup onion (diced)
  • ⅓ cup shredded cheddar cheese

Instructions:

1. Prepare the Filling:

  • Heat a nonstick skillet over medium heat and melt ½ tbsp butter.
  • Add ham, bell peppers, and onion and sauté for 3-4 minutes until softened.
  • Remove from the pan and set aside.

2. Cook the Eggs:

  • In a bowl, whisk eggs, milk, salt, and black pepper until well combined.
  • Heat the same skillet over medium-low heat, adding a little more butter if needed.
  • Pour the eggs into the pan, tilting it to spread evenly.
  • Let cook undisturbed for 1-2 minutes, until the edges start to set.

3. Assemble the Omelet:

  • Sprinkle the sautéed ham, peppers, onions, and cheese over one half of the eggs.
  • Once the eggs are mostly set, carefully fold the omelet in half using a spatula.

4. Serve & Enjoy!

  • Cook for another 30 seconds until the cheese is melted.
  • Slide onto a plate and serve hot with toast, hash browns, or fresh fruit.
