The Denver Omelet
Ingredients:
- 3 large eggs
- 2 tbsp milk (optional, for fluffier eggs)
- ¼ tsp salt
- ¼ tsp black pepper
- ½ tbsp butter
- ¼ cup diced ham
- ¼ cup green bell pepper (diced)
- ¼ cup red bell pepper (diced)
- ¼ cup onion (diced)
- ⅓ cup shredded cheddar cheese
Instructions:
1. Prepare the Filling:
- Heat a nonstick skillet over medium heat and melt ½ tbsp butter.
- Add ham, bell peppers, and onion and sauté for 3-4 minutes until softened.
- Remove from the pan and set aside.
2. Cook the Eggs:
- In a bowl, whisk eggs, milk, salt, and black pepper until well combined.
- Heat the same skillet over medium-low heat, adding a little more butter if needed.
- Pour the eggs into the pan, tilting it to spread evenly.
- Let cook undisturbed for 1-2 minutes, until the edges start to set.
3. Assemble the Omelet:
- Sprinkle the sautéed ham, peppers, onions, and cheese over one half of the eggs.
- Once the eggs are mostly set, carefully fold the omelet in half using a spatula.
4. Serve & Enjoy!
- Cook for another 30 seconds until the cheese is melted.
- Slide onto a plate and serve hot with toast, hash browns, or fresh fruit.
