Grilled Chicken Salad with Seasonal Fruit
Ingredients:
For the Grilled Chicken:
- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
For the Salad:
- 6 cups mixed greens (spinach, arugula, or romaine)
- 1 cup seasonal fruit (strawberries, blueberries, peaches, apples, or pears)
- ¼ cup crumbled feta or goat cheese
- ¼ cup toasted pecans, walnuts, or almonds
- ¼ red onion (thinly sliced)
- ½ avocado (sliced, optional)
For the Dressing:
- ¼ cup olive oil
- 2 tbsp balsamic vinegar (or lemon juice)
- 1 tbsp honey (or maple syrup)
- 1 tsp Dijon mustard
- Salt & pepper to taste
Instructions:
1. Grill the Chicken:
- In a bowl, mix olive oil, lemon juice, garlic powder, salt, pepper, and paprika.
- Coat chicken in the marinade and let sit for 15-30 minutes.
- Preheat the grill to medium-high heat and cook chicken for 5-6 minutes per side, or until fully cooked (internal temp 165°F).
- Let rest for 5 minutes, then slice thinly.
2. Make the Dressing:
- In a small jar or bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
3. Assemble the Salad:
- In a large bowl, combine mixed greens, seasonal fruit, cheese, nuts, red onion, and avocado.
- Add sliced grilled chicken on top.
- Drizzle with dressing and toss gently.
