 Grilled Chicken Salad with Seasonal Fruit







Ingredients:

For the Grilled Chicken:

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika

For the Salad:

  • 6 cups mixed greens (spinach, arugula, or romaine)
  • 1 cup seasonal fruit (strawberries, blueberries, peaches, apples, or pears)
  • ¼ cup crumbled feta or goat cheese
  • ¼ cup toasted pecans, walnuts, or almonds
  • ¼ red onion (thinly sliced)
  • ½ avocado (sliced, optional)

For the Dressing:

  • ¼ cup olive oil
  • 2 tbsp balsamic vinegar (or lemon juice)
  • 1 tbsp honey (or maple syrup)
  • 1 tsp Dijon mustard
  • Salt & pepper to taste

Instructions:

1. Grill the Chicken:

  • In a bowl, mix olive oil, lemon juice, garlic powder, salt, pepper, and paprika.
  • Coat chicken in the marinade and let sit for 15-30 minutes.
  • Preheat the grill to medium-high heat and cook chicken for 5-6 minutes per side, or until fully cooked (internal temp 165°F).
  • Let rest for 5 minutes, then slice thinly.

2. Make the Dressing:

  • In a small jar or bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.

3. Assemble the Salad:

  • In a large bowl, combine mixed greens, seasonal fruit, cheese, nuts, red onion, and avocado.
  • Add sliced grilled chicken on top.
  • Drizzle with dressing and toss gently.
