Crispy Bacon and Sweet Onion Omelet
Ingredients:
- 3 large eggs
- 2 tbsp milk (optional, for fluffier eggs)
- ¼ tsp salt
- ¼ tsp black pepper
- ½ tbsp butter
- 3 slices bacon (chopped)
- ½ cup sweet onion (thinly sliced)
- ⅓ cup shredded cheddar or Swiss cheese
Instructions:
1. Cook the Bacon & Onion:
- Heat a nonstick skillet over medium heat.
- Add chopped bacon and cook until crispy (about 4-5 minutes).
- Remove bacon with a slotted spoon and set aside.
- In the same pan, sauté sweet onions in the bacon grease over medium-low heat for 3-4 minutes until caramelized.
- Remove and drain excess grease.
2. Prepare the Eggs:
- In a bowl, whisk together eggs, milk, salt, and black pepper.
- Wipe the skillet clean and melt butter over medium-low heat.
- Pour in the eggs, tilting the pan to spread evenly.
- Let cook undisturbed for 1-2 minutes, until edges start to set.
3. Assemble the Omelet:
- Sprinkle the crispy bacon, caramelized onions, and cheese over one half of the omelet.
- Once the eggs are almost fully set, carefully fold the omelet in half with a spatula.
4. Serve & Enjoy!
- Cook for another 30 seconds until the cheese melts.
- Slide onto a plate and serve hot with toast, hash browns, or fresh fruit.
