 Crispy Bacon and Sweet Onion Omelet




Ingredients:

  • 3 large eggs
  • 2 tbsp milk (optional, for fluffier eggs)
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ½ tbsp butter
  • 3 slices bacon (chopped)
  • ½ cup sweet onion (thinly sliced)
  • ⅓ cup shredded cheddar or Swiss cheese

Instructions:

1. Cook the Bacon & Onion:

  • Heat a nonstick skillet over medium heat.
  • Add chopped bacon and cook until crispy (about 4-5 minutes).
  • Remove bacon with a slotted spoon and set aside.
  • In the same pan, sauté sweet onions in the bacon grease over medium-low heat for 3-4 minutes until caramelized.
  • Remove and drain excess grease.

2. Prepare the Eggs:

  • In a bowl, whisk together eggs, milk, salt, and black pepper.
  • Wipe the skillet clean and melt butter over medium-low heat.
  • Pour in the eggs, tilting the pan to spread evenly.
  • Let cook undisturbed for 1-2 minutes, until edges start to set.

3. Assemble the Omelet:

  • Sprinkle the crispy bacon, caramelized onions, and cheese over one half of the omelet.
  • Once the eggs are almost fully set, carefully fold the omelet in half with a spatula.

4. Serve & Enjoy!

  • Cook for another 30 seconds until the cheese melts.
  • Slide onto a plate and serve hot with toast, hash browns, or fresh fruit.
