Chicken Florentine
Ingredients:
- 2 large boneless, skinless chicken breasts (halved lengthwise)
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- 2 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic (minced)
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 2 cups fresh spinach
- ½ cup cherry tomatoes (optional, halved)
Instructions:
- Prepare Chicken: Season chicken with salt, pepper, and garlic powder.
- Cook Chicken: Heat olive oil in a skillet over medium-high heat. Cook chicken for 4-5 minutes per side until golden and cooked through. Remove and set aside.
- Make Sauce: In the same pan, melt butter and sauté garlic for 1 minute. Add chicken broth, heavy cream, Parmesan, and Italian seasoning. Simmer for 2-3 minutes.
- Add Spinach: Stir in spinach (and tomatoes if using) and cook until wilted.
- Combine: Return chicken to the skillet, spoon sauce over the top, and let simmer for 2-3 minutes.
- Serve: Enjoy over pasta, rice, or with crusty bread!
