Pistachio-Crusted Salmon
Ingredients:
- 2 salmon fillets (about 6 oz each)
- 1/2 cup pistachios, finely chopped
- 1/4 cup breadcrumbs (or panko for extra crunch)
- 1 tbsp Dijon mustard
- 1 tbsp honey (or maple syrup)
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp lemon zest (optional, for extra freshness)
Instructions:
- Preheat Oven: Set to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare Pistachio Crust: In a bowl, mix chopped pistachios, breadcrumbs, garlic powder, salt, pepper, and lemon zest (if using).
- Coat the Salmon: Place the salmon fillets on the baking sheet, skin-side down. Brush the top of each fillet with Dijon mustard and honey.
- Add the Crust: Press the pistachio mixture onto the mustard-coated salmon, ensuring an even layer.
- Bake: Cook for 12–15 minutes, or until the salmon is flaky and the crust is golden brown.
- Serve: Enjoy with a squeeze of fresh lemon juice and your favorite side dish, like roasted veggies or quinoa.
